<p>Hi, everyone! I’m the Page behind the food blog <a href="http://notesonapage.com"><strong>Notes On A Page</strong></a>. <span id="more-302"></span> When <strong>Uncommon Grounds </strong>challenged me to use their coffee in a recipe, I accepted! I love a good culinary conundrum.</p>
<p>I decided to make banana bread inspired by <a href="http://www.moosewoodrestaurant.com/"><strong><em>The Moosewood Cookbook</em></strong></a> with some modifications of my own.  This particular recipe calls for bananas soaked in coffee.  I don’t know who first came up with this idea, but it makes for very moist, delicious bread that tastes nothing like coffee.  Don’t be shy now – try it out for yourself!    </p>
<p>This recipe makes 2 regular loaves or 5 mini loaves. It is very simple to cut this recipe in half.  </p>

<h2><strong>Uncommon Banana Bread</strong></h2>
<p>1 ½ cups melted butter<br />
1 ¾ cups brown sugar<br />
4 eggs, room temperature<br />
2 ½ teaspoons vanilla extract<br />
½ teaspoon almond extract<br />
Grated rind from 1 lemon<br />
2 cups whole wheat flour<br />
2 cups white flour<br />
1 teaspoon salt<br />
2 teaspoons cinnamon<br />
½ teaspoon nutmeg<br />
½ teaspoon baking soda<br />
3 teaspoons baking powder<br />
4-5 ripe bananas, mashed<br />
1 cup Uncommon Grounds coffee, brewed</p>

<p>Put the mashed bananas in a bowl and pour the coffee over them.  Stir a little so the coffee evenly covers the fruit.  </p>

<p>In a large bowl, beat the sugar, butter, eggs, extracts, and lemon.  In another bowl mix the flours, salt, baking soda, baking powder, nutmeg, and cinnamon.</p>
<p>Add the flour and banana mixture to the wet ingredients.  Don’t over mix it – the batter should be a little chunky! </p>

<p>Butter loaf pans and sprinkle the bottom and sides with flax seeds.  Bake at 350 degrees for 30-40 minutes.  The mini loaves make great gifts.  Just be sure to save one for yourself! </p>
