Hi, everyone! I’m the Page behind the food blog Notes On A Page. When Uncommon Grounds challenged me to use their coffee in a recipe, I accepted! I love a good culinary conundrum.
I decided to make banana bread inspired by The Moosewood Cookbook with some modifications of my own. This particular recipe calls for bananas soaked in coffee. I don’t know who first came up with this idea, but it makes for very moist, delicious bread that tastes nothing like coffee. Don’t be shy now – try it out for yourself!
This recipe makes 2 regular loaves or 5 mini loaves. It is very simple to cut this recipe in half.

Uncommon Banana Bread
1 ½ cups melted butter
1 ¾ cups brown sugar
4 eggs, room temperature
2 ½ teaspoons vanilla extract
½ teaspoon almond extract
Grated rind from 1 lemon
2 cups whole wheat flour
2 cups white flour
1 teaspoon salt
2 teaspoons cinnamon
½ teaspoon nutmeg
½ teaspoon baking soda
3 teaspoons baking powder
4-5 ripe bananas, mashed
1 cup Uncommon Grounds coffee, brewed

Put the mashed bananas in a bowl and pour the coffee over them. Stir a little so the coffee evenly covers the fruit.

In a large bowl, beat the sugar, butter, eggs, extracts, and lemon. In another bowl mix the flours, salt, baking soda, baking powder, nutmeg, and cinnamon.
Add the flour and banana mixture to the wet ingredients. Don’t over mix it – the batter should be a little chunky!

Butter loaf pans and sprinkle the bottom and sides with flax seeds. Bake at 350 degrees for 30-40 minutes. The mini loaves make great gifts. Just be sure to save one for yourself!
